Fun Gluten Free Cookie Recipe

Some times it is difficult to find a good gluten free cookie recipe. But when I found this one I knew it was a winner.
Gingerbread cookies are at the heart of many families holiday traditions. When you have a household which is gluten-free you do not have to miss out on the festive tradition.
Try this wonderful gingerbread gluten free cookie recipe and enjoy some fun family time in the kitchen.


Gluten-Free Gingerbread Cookies
Makes 1 ½ - 2 dozen cookies

Ingredients:
• ½ cup soften coconut oil or unsalted butter
• ¼ cup sugar
• ¼ cup maple syrup
• ¼ cup molasses
• ½ cup pumpkin puree
• 1 Tbsp vanilla
• ½ tsp salt
• 2 ½ cups Auntie Pam’s Gluten Free Flour
• 2 tsp baking powder
• 1 ½ tsp cinnamon
• 1 tsp ginger powder
• ½ tsp ground cloves
• ¼ tsp ground nutmeg

Instructions:
• In a medium sized bowl, whisk together the first 7 ingredients (coconut oil through salt)
• Add the remaining dry ingredients to the wet and mix well
• Form a dough ball and wrap in wax paper. Chill in the refrigerator for 20 min
• Preheat over to 375 degrees
• Lightly flour a counter surface and place dough ball in the center of this surface
• Using a rolling pin, roll out to about ¼ inch thick
• Cut out with favorite cookie cutters and place onto a greased baking sheet
• Bake for 15 min. Remove from cookie tray and let cool on a rack
